Ingredients

Spicy Peanut Chicken with Creamy Peanut Sauce

Chicken Marinade
● 11⁄2 lb chicken tenders
● 1 tablespoon curry powder
● 1 teaspoon sugar
● 1 teaspoon salt
● 11⁄2 teaspoons ginger powder
● 1⁄4 cup coconut milk
● 1 tablespoon sesame oil
● 1 tablespoon soy sauce
Peanut Sauce
● 3⁄4 cup NouBon Spicy Peanut Butter
● 1⁄8 cup white sugar
● 2 teaspoons soy sauce
● 1 teaspoon fish sauce
● 1 tablespoon rice wine vinegar
● 1 teaspoon salt
● Remaining coconut milk (from the 14 oz can)
● 2 cloves garlic, finely diced
● 1-inch piece fresh ginger, finely diced

● 1 teaspoon sesame oil
To Serve
● Fresh cilantro
● Lime wedges

Instructions

The chicken is marinated until juicy and cooked until golden, then served with a silky peanut sauce that's nutty, creamy, and finished with a gentle kick from Scotch Bonnet pepper. Serve it over rice, alongside roasted vegetables, or enjoy it straight from the pan with a squeeze of freshlime. However you plate it, don't be surprised if this one makes its way into your regular dinner
rotation.

  1. Combine the chicken with all of the marinade ingredients and let marinate for at least 30 minutes, or overnight

2. Cook the chicken in a lightly oiled skillet over medium-high heat for about 3 minutes per side, until golden and cooked through. (You can also thread the chicken onto skewers.)

3. Sauté the garlic and ginger in sesame oil until fragrant. Stir in the remaining sauce ingredients and simmer for 5–10 minutes, until smooth and slightly thickened.

4. Spoon the peanut sauce over the chicken, garnish with fresh cilantro and a squeeze of lime, and enjoy.
